It's seems that the problem here is that the stuff you were expecting in the patch is 'expansion-worthy' material. The patch is designed to fix problems with existing content, and not expand the game with new stuff.

These aren't even small changes. These are fundamental changes to pretty much all of the castle building aspects of the game. If there were doors on these buildings on release and they didn't work, we would have fixed them. If the back of the SH2 box said 'Doors on keeps' and they weren't there, we would have added them in. Hell, if we'd have designed them into the game from the start and they never got finished because of time problems, we would have probably added them into the patch.
Besides, ok - you want doors on the keep and are disappointed it's not in there for free. Taking into account this was never, ever planned in the first place.. say we did add doors to the keep in a patch. What if the guy next door wanted another piece of siege equipment? Or someone else wanted 3 new food types and was dissapointed they weren't in the patch. Should we add those too?

This is something we would have loved to do, but it's nowhere as easy as it seems...
As you zoom out in the game world, you obviously end up with more and more polygons being drawn as more objects (people, buildings, whatever) end up in the camera's view. If the number of polys on each object stayed static, the game would get slower and slower as you zoomed. To stop this happening, the art team had to create 3 levels of detail for everything (a low, medium and high). As you zoom, the game switches between those models...
Towards the end of developement, we knew we needed to be able to zoom out even more (oh yes, it was a lot worse before release), so the art team spent 2 weeks making a complete new set of 'ultra-low' detailed models. We'd need another set of graphics to be able to zoom out more and keep the game running at a decent rate (please, no jokes about lag here). Not only would that require a LOT of art time, but imagine the patch size!

I know the moats in SH2 aren't built the same way as in SH1/SHC, and to be honest I have no idea why this is. Time reasons maybe. Maybe technical. I'm guessing everyone wants the old moat system back, and I'm sure we'd have put it in the other way if it would have taken a couple of hours
